I don’t think it’s much of a secret that we absolutely LOVE muffins around here. I have so many different recipes here on the blog, and others that I make all the time…
I thought it would be time to gather them all in one place!
Easy muffins are one of my favorite items to stock my freezer with. They freeze well, defrost quickly and are always great to have on hand for healthy snacks or easy breakfasts.
This also helps me free up those hectic morning hours, when everyone gets up and is HUNGRY, things need to get done and coffee is yet to be had.
I try to stick to muffin recipes that are healthy, some of them have some processed sugar or are part white flour.
But in pretty much all of them you can use all whole grain flour and substitute some or all of the sugar with honey. Just make sure to add another tablespoon or two of flour!
My tips to make these best muffin recipes truly the best, ever:
- Don’t overmix the batter. The less you stir the wet and dry ingredients together, the fluffier your muffins will be. Just stir enough to remove any visible dry flour, but some lumps are absolutely fine.
- Use a cookie scoop to add the batter to the muffin cups. This was a game changer in my muffin baking! I use a large cookie scoop like this one (FYI, this is an affiliate link and I make a commission for purchases made through clicking it) and it’s mess-free, quick and EASY.
- Don’t overbake. Bake the muffins just until they’re done – until a toothpick inserted into the middle comes out pretty clean. Overbaked muffins are dry and boring, and they don’t keep well.
