We’re getting really close to Christmas. Almost dangerously close.
Dangerously close if your gifts aren’t wrapped, Amazon Prime isn’t fulfilling its delivery date promises and your halls are not yet decked to your satisfaction, that is.
I never realized how much work it is to make Christmas magical. But being the adult who is primarily responsible for adding that certain kind of jolly spirit all around – it really doesn’t just happen.
In between dealing with the craziness of a food business (this blog! still can’t believe it most days) during the holiday season, the insanity of looking after two highly demanding munchkins AND trying to keep the house from crumbling to the ground – where does one make time to prep for Christmas?
I struggled with this a lot during the first couple of Christmas seasons as a mom.
I wanted things to be so perfect. I spent all of my time curating The Perfect Christmas on Pinterest.
And in the end? I spent so much time browsing pretty photos that I felt discouraged and gave up, wasted time on my phone instead of actually doing, well, anything.
Last year was the first time we had a tree AND wrapped presents. It was also the first time we cooked an actual Christmas dinner and celebrated, just the four of us.
So… What changed?
I started doing instead of dreaming.
Is it easier? Mentally, yes.
But physically? No way.
It’s actually indefinitely harder, because running a well-oiled machine kind of household takes a lot more elbow grease than pinning pretty photos.
That kind of physical work needs fuel. And because I’m so in love with Christmas, I want my snacks to taste Christmas-y, too.
Now please give a very warm welcome to these Cinnamon Energy Bites!
They are my kids’ favourite from all the energy bites I’ve ever made. We devoured the batch in about a day and a half, no shame there.
Three reasons why we love them so much:
- They are SO easy to make with pantry ingredients.
- All ingredients are perfectly wholesome, so I don’t fall into the trap of snacking on Christmas cookies (been there, done that).
- They’re nut free, we don’t have any allergies but it’s definitely nice to have this option.
My favourite one is probably reason #1, because who doesn’t love an easy-to-make snack?
And these no bake energy bites are so incredibly easy to put together:
- Add ingredients to a powerful food processor
- Process until the mix looks like cookie dough (see below for example photo)
- Roll into balls
- Commence snacking
I will say that the intensity of the cinnamon flavour depends on the cinnamon you’re using (kind of obvious, but I thought I should mention it).
If you feel like the cinnamon is not strong enough, add a little more. But it also intensifies over time, so don’t go too crazy.
If you’re not a fan of coconut and don’t care about making them tree nut free, you can use almonds instead (maybe you’ll need to add a few tablespoons of water to process them down).
Also, you can use pretty much any kind of fat in place of the coconut oil – even peanut butter works.
And with that kind of snack? Christmas actually doesn’t feel so dangerously close anymore.

- 1 cup dried apricots
- 1/2 cup dried dates
- 1 cup rolled oats
- 1 cup shredded coconut
- 2 tablespoons coconut oil
- 1-2 teaspoons cinnamon
- 1 Pinch salt
- Add all ingredients to a powerful food processor and process until it has the consistency of firm cookie dough.
- Roll into balls, I use a heaping teaspoon of mix per energy bite.
- Store in an airtight container in the fridge for up to a week.
