You, mama. You, tired from the baby not sleeping at night. You, frustrated because you feel like you spend all day in the kitchen. You, overwhelmed by “easy” recipes with an ingredient list longer than your to-do list.
It’s a recipe to give you a break. One that allows you to put a healthy, veggie and protein-packed dinner on the table, and doing so without the fuss. Without feeling defeated by the impression that all you do in a day is cook and clean up afterwards.
You can learn to like cooking, because let’s face it – if you want to feed your family a reasonably healthy diet, you ARE inevitably going to spend time in the kitchen.
But it doesn’t have to be all day, I promise.
If you want to learn to fall a little bit in love with cooking, you first have to fall out of your frustration with cooking. And nothing better to do that with than a simple, healthy one pot dinner.
How to make sure this one pot creamy tomato, chicken and spinach pasta is actually giving you a break:
start with a reasonably clean kitchen
I’m an advocate of at least putting the kitchen into a state that doesn’t give you anxiety after every meal.
This DOESN’T mean you have to wash every single pot and pan. (But you might actually not mind doing so after getting into the habit.) Read up on my simple 3-step routine to get the kitchen back on track after meals.
If your kitchen is in a terrible state, it makes even the easiest meal hard and frustrating to cook.
Get all ingredients out before you start
Prep for this is literally “cut up chicken and onion and cheese, dump everything in a pot”.
Running back and forth between the fridge, cupboard and countertop only adds to your stress. Since prep time is minimal here, you can easily gather all your ingredients before you start slicing.
Watch the pot
Since there’s milk in the recipe, boiling over happens quickly and painfully.
Burnt milk STINKS!
So make sure to not leave your pot unattended, especially not while it’s covered in the beginning.
Use a large pot
I’d go for about 6 quart, so you can easily stir without spilling, and have to worry less about things boiling over.
Serve the pasta immediately after cooking
5 minutes are OK (especially if you like a thicker sauce, letting the pasta rest for a little while will help if you feel it’s too runny after cooking!), but the longer it stands, the mushier it gets.
That’s because the pasta continues soaking up the liquid. Which is why I recommend serving pretty much immediately when it’s done.
If you have leftovers, they can still be eaten (we do it if we end up with leftovers). But the pasta will become quite soft and the sauce will be a lot thicker.
Here’s the printable recipe for this One Pot Creamy Tomato, Chicken and Spinach Pasta
- 2 chicken breasts, diced
- 1 medium onion, diced
- 2 cans chopped tomatoes
- 1 tbsp Italian herbs
- 5 ounces Feta cheese, cubed
- 4 cups pasta
- 2 handfuls spinach
- 4 cups chicken broth
- 1 cup milk, any fat content works
- Place all ingredients in a large pot. Carefully stir to prevent pasta from sticking to the bottom of the pot and burning.
- Cover and bring to a boil over high heat (pay close attention so it doesn’t boil over!). Reduce the heat to a simmer and cook for 10-15 minutes or until the pasta is done. Serve immediately.
