This cucumber melon fruit salad recipe is just what you need! Healthy with honey and mint and super easy to make for your next summer BBQ or potluck.
Yes, fruit salad! It’s the dessert of champions, wooohoo!
Do you belong to those people who can get really disappointed by fruit salad? I myself most certainly do!
Say fruit salad and I immediately start dreaming of a sweet and tangy concoction of various fresh and colorful pieces of fruit.
And darn, there is that sad excuse of a fruit salad, consisting of hard and sour bits of apple, brown and mushy banana and flecks of tasteless orange. Me = super disappointed. Pout.
Luckily I dodged that bullet when I made this dual toned salad as a little afternoon treat today.
Phew. No disappointment there! It’s everything a fruit salad has to be – sweet, slightly tangy, refreshing and pretty. Oh boy, talk about pretty!
Speaking of pretty, shall I tell you a little secret?
My first attempt at this fruity something got all gobbled up with no pictures taken.
I thought I’d be so clever and cut all the fruit into fun shapes with some cutesy cookies cutters.
Well, let’s just say it was a bad idea, no beauty contests to be won there!
Shall I tell you another fun story about fruit salad?
I promise, this one really is funny (well, it was to me when it happened)!
Way, way back when I was in primary school we did a project on healthy eating.
Now, it was 90ies style healthy eating involving lots of artificial sweeteners and such but nevertheless. Healthy eating.
My teacher – who was the most awesomest teacher any student could ever wish for – put all of her heart and soul into the project and organized a healthy lunch potluck where groups of students would each prepare a healthy dish together.
Even the parents were invited, so it was a really big thing for us.
My group was assigned fruit salad which we were supposed to prepare at my home and then bring back to school.
Now let me just start with this: I’m assuming my teacher told the parents to stay out of our way and let us prepare the stuff all by ourselves.
I’m also assuming that my mum was very much likely the only parent to have obeyed this rule and just let us lose in the kitchen with the door closed behind her. Bless.
I’m assuming for a third time here, but it might very possibly have been the reason our “healthy” fruit salad ended up with about twentythousandandone tablespoons of sugar.
But hey, at least we made it without any help!
Of course all that sugar turned our banana-apple-orange combo into an inedible mush (which might just about be why I get so emotional over fruit salad now).
Learning by doing guys, learning by doing.
And yes, I did learn! With this cucumber melon fruit salad I completely succeeded (*cough cough*, apart from the mishap with the fun shapes of course) – only a little bit of honey to bring out the fruit’s natural sweetness.
Cucumber and mint to add to the overall freshness and nice and tangy grapefruit to dress it all up.
Oh man, I’m getting all emotional about this again. But it’s tears of joy, guys. Tears. Of. Joy.
