Three Ingredient Pineapple Pork Recipe – A speedy weeknight dinner you can put together in no time! Quick, easy and SO tasty!
Do you ever lie?
I do sometimes. I’m doing it right now.
No, don’t worry, I’m not lying about how insanely good this pork is. And neither am I deceiving you when I’m saying it’s the easiest dinner in existence. But the three ingredient claim is stretching the truth a tiiiiiny little bit.
Well, the things you need to pay attention to, that’s definitely three ingredients:
Pineapple, pork and scallions. They are running the show here.
Sidekicks: Salt, pepper and oil. But they don’t really count, right? Ha! So I wasn’t lying at all!
I’m not even good at lying. Terrible really. When I was little I always wondered how my mom could tell every.
Single. Time. I wasn’t telling the truth.
ears later I came to the conclusion that it must have had something to do with, you know, me not being able to stop the grin all over my face.
Damn you, face muscles! So good for so many things (uhm, eating for example?) and so frustrating when trying to fib about why it took me two hours to get home from kindergarten (which was about five minutes away from our home).
The worst thing was that I didn’t only have to grin when I was telling a lie, sunshine spread over my face when I was merely trying to show one.
Let me explain: I am a terrible sleeper. And I have always been really bad at it.
It’s not like my mom ever tires of telling the story how I got out of bed in my long white nightgown about a million times every night, walked into the living room and complained to her and my dad about not being able to sleep.
I don’t think she knows I could have gotten up a lot more.
Because it’s not like I fell asleep after they told me I wasn’t allowed to leave my bed anymore for the night. The only thing making it possible to disguise this fact from my mom?
My beloved teddy bear (who is still sleeping in my bed right now by the way – not embarrassing at all, right?) which was usually covering my face at night when my parents came in after 10pm to switch off my night light.
Otherwise they would have seen my wide grin I was not in any way able to hold back.
There is actually a cute picture of my tiny self sleeping in my dad’s arms. And by sleeping I mean not fully hiding a grin.
But I digress. Back to business. Pork. Where was I?
Ah yes, the three ingredient question. Well, even if you count it as six ingredients, it’s not much really, right?
Knew it! If you’re going to make the optional salsa (which totally consists of three ingredients – score!), now that’s an entirely different story.
But it’s optional because the pork tastes heavenly and sweet and succulent all without it. See? Covered up my grin right there!
Let me finish by saying that this really is an easy weeknight dinner option, low on ingredients (here I’m being truthful for once) and super speedy to put together.
Even with the salsa. Promise I’m not hiding any grins!
Three Ingredient Pineapple Pork Recipe

- 1 lb pork tenderloin cut into 1 inch thick rounds
- 6 pineapple rings quartered
- 2 large scallions cut into rings
- Salt & pepper
- Oil for frying
- 1/3 cup chopped sun dried tomatoes
- 1/3 cup roasted red peppers
- 1 tablespoon olive oil
To Make the Pork
- Season the pork on both sides with salt and pepper.
- Heat the oil in a large frying pan over medium-high heat.
- Add the pork and fry until browned, about two to three minutes per side. Add the pineapple and the scallions and continue frying for another two minutes or until the pineapple is starting to caramelize.
- Serve with rice (or your favorite side).
To Make the Salsa
- In a small food processor or with an immersion blender blend all ingredients together until creamy.
