Chicken, parmesan, mozzarella, flour, bread crumbs, Panko, Italian seasoning, dried parsley, salt, pepper, olive oil, egg, marinara, fresh basil and parsley.
Prepare breading mixes
Add flour to one bowl, beat egg in a second bowl and combine breadcrumbs, Panko, parmesan and seasoning in a shallow dish. Season chicken with salt and pepper.
First coat the chicken in flour, then dredge through the egg. Finally, thickly coat with the breadcrumb mixture.
Brown the chicken in batches in a skillet with plenty of olive oil (1 tablespoon per chicken breast) over medium-high heat.
Assemble and bake
Transfer the chicken to a lightly oiled sheet pan. Top with marinara, fresh herbs and cheese, then bake.
Finish and serve
I top with more cheese 5mins before the baking time is up, for more texture and melty goodness. Sprinkle with chopped basil and parsley and serve immediately!
