Chopped Greek Salad Stuffed Avocados with Tzatziki Sauce
These healthy chopped greek salad stuffed avocados are a great summer treat for lunch. No cooking involved!

Ingredients
For the Salad
½
cucumber
deseeded and diced
1
yellow pepper
diced
½
pint
cherry tomatoes
quartered
1
red onion
chopped
⅓
cup
Kalamata olives
3
ounces
Feta cheese
cubed
¼
cup
fresh oregano
1
lemon
juice only
a few tablespoons olive oil
salt & black pepper
to taste

avocados
halved, pitted and very slightly scooped
For the Tzatziki Sauce
½
cup
Greek yogurt
½
cucumber
deseeded and finely chopped
1
clove garlic
minced
salt & black pepper
to taste
Instructions
Combine all salad ingredients (except for avocados) in a large bowl. Toss well.
Stir together all ingredients for the tzatziki sauce.
Fill avocado halves with the salad and top with the sauce. Serve immediately.
