Ingredients

Zucchini

  • 2 zucchini cut into rounds
  • 3 tablespoons flour
  • 1/2 teaspoon garlic powder
  • Salt & pepper
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan
  • Oil spray

Dip

  • 1 container Greek yogurt
  • Juice of 1/2 lemon
  • Handful of fresh garden herbs chopped
  • Salt and pepper to taste

Instructions

To Make the Zucchini

  • Preheat the oven to 450°F. Line a baking tray with parchment paper and spray with oil.
  • Add the flour to a shallow dish and mix with the garlic powder, salt and pepper. To a second dish add the egg and whisk well. To a third dish add the breadcrumbs and the parmesan.
  • Dip the zucchini rounds first into the flour (shaking off any excess), then into the egg and finally coat with breadcrumb-cheese mixture. Put them on the baking tray in a single layer and lightly spray the tops with oil.
  • Bake for 10-15 minutes, turning the zucchini once halfway through. Serve fresh out of the oven.

To Make the Dip

  • Mix all dip ingredients together in a small bowl. Cover and leave to sit in the fridge for 30 minutes before serving to let the flavors develop.

Notes

It's delicious to roast some other plain vegetables with the zucchini in the oven! Mini sweet peppers, cherry tomatoes... Anything! Just spray with oil and bake together with the zucchini.
