Ingredients

  • 1 tsp oil
  • 3 tbsp chopped bacon
  • 2 chicken breasts cut into bite sized pieces
  • 1 small onion chopped
  • 1 garlic clove minced
  • 10 sun-dried tomatoes in oil drained and chopped
  • 2 tsp Italian seasoning
  • 1/2 cup white wine optional, use more broth as a substitute
  • 4 cups chicken broth
  • 4 cups penne pasta
  • 1 cup milk

Instructions

  1. Heat the oil in a large pot over medium-high heat. Add the bacon and cook for one minute. Add the chicken and cook until browned.

  2. Add the onion, garlic, tomatoes and Italian seasoning to the pot and cook for another 2-3 minutes while stirring often.

  3. Once the pot is sizzling hot and the bottom is starting to brown, pour in the white wine (or 1/2 cup chicken broth if not using wine). Bring the wine to a boil while scratching the browned bits off the bottom of the pot.

  4. Pour the chicken broth into the pot, add the pasta and stir well. Bring to a boil, cover and simmer for 8-10 minutes or until the pasta is almost done.

  5. Take the pot off the heat and quickly stir the milk into the pasta. Bring back to a low simmer until the sauce has thickened slightly, around 1 minute. Serve immediately.
