1(12-oz) boxbowtie pasta shapescooked and rinsed under cold water
5ozmini pepperoni slices
For the dressing
¼cupfinely grated parmesan
2tablespoonsred wine vinegar
½teaspoonsaltdepending on how salty your parmesan is
black pepperto taste
fresh basil and oregano for garnishoptional
Mix all salad ingredients in a large salad bowl.
Whisk together the dressing ingredients until creamy and fully combined. Pour over the salad and toss well. Garnish with fresh basil and oregano if you like.
The salad keeps well in the fridge in a tightly closed container for a day. The pasta might soak up a lot of the dressing so use your best judgement if it needs additional dressing before serving - you can always whip up half or even quarter of a batch and mix it in.
