Combine all salsa ingredients in a medium bowl, cover and refrigerate.
Make the shrimp:
Heat oil in a large skillet over medium high heat. Brown the shrimp until crispy, turning once. Add lime juice, chopped cilantro, salt and pepper and toss. Remove from the pan and wipe the pan.
Make the zucchini noodles
Heat the pan once more and add a little more oil. Toss the spiralized zucchini until they're cooked through, but not mushy. Season to taste.
Serve
Serve the zucchini noodles with shrimp, salsa and additional cilantro and sliced chili, if you like.
