Strawberry Spinach Salad with Poppy Seed Dressing is the perfect spring inspired salad. This is the perfect side dish for Easter, but it’s easy enough for any day of the week. The homemade poppy seed dressing is tangy and refreshing, and you can even make it ahead and store it in the fridge for easy meal prep!

For the dressing:

  • 1/4 cup extra virgin olive oil
  • Finely grated zest of 1/2 lemon
  • 2 tablespoons fresh squeezed lemon juice
  • 1/2 tablespoon Dijon mustard
  • 1/2 tablespoon honey
  • 1/2 tablespoon poppy seeds
  • 1/4 teaspoon fine sea salt less if using table salt!

For the salad:

  • 3 tablespoons almonds chopped
  • 1 pound strawberries rinsed, hulled and sliced
  • 1 medium cucumber washed and sliced
  • 10 oz bag baby spinach
  • 1 handful fresh mint leaves washed and dried


  • To make the dressing, whisk all dressing ingredients together until smooth.
  • To make the salad, carefully toss all salad ingredients in a large bowl with the finished dressing. Serve immediately.


To prep the salad ahead of time, store the dressing and the salad ingredients in separate containers in the fridge for up to a day. Dress right before serving.
