This Healthy Applesauce Bread is a delicious fall treat that bakes up quick and easy. Serve it for breakfast or brunch slathered with butter and apple butter!
1tablespoonapple pie spiceor use cinnamon, or a mix of cinnamon and pumpkin spice
1.5teaspoonsbaking powder
½teaspoonbaking soda
¼teaspoonsalt
Wet Ingredients
2large eggs
1cupthick-style unsweetened applesauce
½cupGreek yogurt
2-4tablespoonsmelted butter OR oil
Topping (optional)
¼cupquick-cooking oats
¼cupbrown sugar
2tablespoonschopped pecans
½teaspooncinnamon
2-3tablespoonscold butter
Instructions
Prep: Line a 5x9inch loaf pan. Preheat the oven to 350°F.
Combine dry ingredients: Add all dry ingredients to a large bowl and mix well.
Combine wet ingredients: Add all wet ingredients to a large measuring jug and mix well.
Make topping: Stir oats, brown sugar, pecans and cinnamon together in a small bowl. Add butter and blend in until crumbs form.
Combine wet and dry: Add dry ingredients to wet ingredients and fold JUST until combined. Do NOT overmix!
Bake: Add batter to prepared loaf pan. Add topping, lightly pushing it into the top of the bread. Bake for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
Cool: Cool in the pan for 5-10 minutes, then remove to a cooling rack.
