One Pot Chicken Burrito Bowls

- 1 tablespoon olive oil
- 1/2 pound chicken breast diced
- 1 large onion chopped
- 2 garlic cloves minced
- 1 large red pepper diced
- 1 cup brown rice
- 1 can kidney beans
- 1 cup corn kernels
- 1 can diced tomatoes
- 2 cups chicken stock
- 2 tablespoons taco seasoning
- 1/2 cup finely shredded cheddar cheese
- avocado, cilantro, green onions and lime wedges to serve
Heat the olive oil in a large pot over medium-high heat. Brown the chicken for 3-4 minutes.
Stir the onion, garlic and red pepper into the pot and cook it for 2 minutes.
Add all remaining ingredients (except for the cheese and the toppings) to the pot. Bring the liquid to a boil. Cover the pot with the lid, reduce the heat to a simmer and leave the pot to cook gently for 25-30 minutes, or until the rice is done.
Take the pot off the heat and top the rice with the cheese. Immediately serve with the toppings.
