A quick and easy one pan dinner you can have on the table in just 30 minutes. Made with pillowy gnocchi, juicy chicken thighs, fresh spinach and creamy white beans - all coated in a restaurant-style garlic parmesan sauce!
1lbboneless, skinless chicken thighscut into bite-sized pieces
Italian seasoning, garlic powder, salt & pepperto taste
1tablespoonoil
1tablespoonbutter
1mediumyellow onionfinely diced (about 1 cup)
2clovesgarlicminced (about 1-2 teaspoons)
1 ½cupschicken broth
1(16-oz) packagegnocchi
1(15-oz) canwhite beansrinsed and drained
½cupheavy cream
½tablespooncornstarch
½cupgrated Parmesan cheeseplus more to serve
1cupchopped spinachpacked - you can add more if you prefer!
Instructions
Chicken:Season the chicken thighs well with Italian seasoning, garlic powder, salt and pepper.Heat a medium-large skillet or braiser to medium-high heat. Add the oil, then sear the chicken thighs until browned, about 3-4 minutes.

Aromatics:Reduce the heat to medium. Add the butter to melt, then add the onion to the chicken and sauté until fully softened, about 5 minutes. Stir in the garlic and cook for another minute.

Simmer gnocchi:Stir the chicken broth into the skillet, scraping up any browned bits off the bottom of the pan. Stir in the gnocchi and beans, then cover and simmer for 3-5 minutes, until the chicken and gnocchi are done.

Finish:Once the gnocchi and chicken are both done, reduce the heat to the lowest simmer. Whisk the heavy cream with the cornstarch and stir into the sauce. Add the parmesan and spinach and cook on the lowest simmer until thickened, creamy and heated through.

Serve:Serve immediately with extra parmesan and cracked black pepper, if you like.
Notes
Chicken breast cut into bite-sized pieces works in place of the chicken thighs, just be careful so you don't overcook it/don't dry it out.Feel free to use your favorite garlic herb seasoning blend in place of the individual seasonings.Do not boil the dish after adding the cream - it may split and curdle if you do. Stick to a low simmer to finish the cooking process.
