This easy one-skillet Creamy Tomato Basil Chicken transforms standard chicken breasts or thighs into a restaurant-worthy feast. It is a hearty, stress-free weekday dinner that pairs perfectly over a quick bed of pasta or served with warm, crusty bread to soak up every last drop of the decadent cream sauce.

Instructions
Prep chicken:If using chicken breast, cut the chicken lengthwise and crosswise into 8 cutlets. For either chicken cut, lightly pound the chicken between two sheets of plastic wrap to tenderize and to get a more even thickness.Rub the chicken with 1 tablespoon oil, then sprinkle with the seasoning (1 tablespoon ground paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder), salt and pepper and gently rub it in.
Sear chicken:Heat a large skillet over medium-high heat. Once hot, add the chicken and sear well from each side (it doesn’t have to cook through yet). Remove to a plate and set aside.
Sauté aromatics:Reduce the heat to medium. Add the remaining tablespoon of oil to the skillet. Sauté the onion until softened, about 5-6 minutes. Add the garlic and cook for 30 more seconds.

Add tomatoes:Stir in the sun-dried tomatoes for 30 seconds, then stir in the tomato paste until it smells fragrant and slightly darkens - 30 to 60 seconds. Stir in the cherry tomatoes and cook over medium to medium-low heat, until the tomatoes are starting to soften - 3-5 minutes, depending on the size and ripeness of your tomatoes. Lightly season with salt and pepper.

Simmer the sauce:Stir in the chicken broth, scraping any browned bits off the bottom of the pan. Stir in the pesto and bring to a simmer.Cut ¾ of the basil into ribbons and add it to the pan. Simmer for 3-4 minutes, until the sauce has reduced a little.

Finish:Reduce the heat to the lowest simmer. Whisk the heavy cream and the cornstarch together in a small measuring cup, then stir it into the sauce (stir fast, and well).Add the chicken and continue simmering gently until the chicken reaches an internal temperature of 165°F. Adjust heavy cream and seasoning to taste.

Serve:Serve the chicken over pasta if you like, with extra basil and grated Parmesan cheese.
