An easy recipe that yields soft and fluffy muffins, studded with apples and full of the flavor of warm spices. Perfect to tuck into a lunchbox, or to have as an after-school snack!
½cupgranulated sugarplus extra for topping if you like

½cupGreek yogurt
1teaspoonvanilla extract
1½teaspoonsground cinnamon
½teaspoonapple or pumpkin spice
¼teaspoonsaltuse closer to ½ teaspoon if you use sea salt
1½teaspoonsbaking powder
2cupsall-purpose flourfluffed, spooned and leveled; OR see notes for other measuring methods!
For the apples
2cupsfinely diced applesGranny Smith or Pink Lady are our favorites (about 8 to 9oz chopped; I usually need ~2 large apples to get 2 cups)
2tablespoonsflour
2tablespoonslight brown sugar
1teaspoonground cinnamon
Instructions
Prep: Preheat the oven to 425°F. Line a 12-cup muffin pan with muffin liners.
Whisk wet ingredients: In a medium-large mixing bowl, whisk together the oil, eggs, ½ cup light brown sugar, granulated sugar, milk, Greek yogurt and vanilla.
⅔ cup oil, 2 large eggs, ½ cup granulated sugar, ½ cup milk, ½ cup Greek yogurt, 1 teaspoon vanilla extract, ½ cup light brown sugar
Stir in dry ingredients: Whisk 1.5 teaspoons ground cinnamon, apple spice, salt and baking powder into the wet ingredients until fully incorporated.Add 2 cups flour to the bowl and fold in JUST until no more dry flour is visible. Set aside

Prepare apples: Toss apples with 2 tablespoon flour, 2 tablespoons light brown sugar and 1 teaspoon ground cinnamon.
Assemble muffins: Fold apples into batter, then evenly divide between the prepared muffin cups. Sprinkle tops with extra sugar and dust with cinnamon, if you like.
Bake: Reduce oven temperature to 400°F. Bake muffins for 5 minutes, then reduce oven to 350°F without opening oven door, and finish baking for 16-18 minutes, or until done. Cool muffins in the pan for 5 minutes, then remove to a cooling rack to cool completely.
Notes
Sugar amount:You can reduce the light brown and granulated sugar in the batter to ⅓ cup each if you prefer to make a lower sugar treat. They bake up just fine with less sugar, however, note that it does slightly affect the taste.Measuring the flour in the batter:
