Instructions
Prep:Line and grease a baking sheet. Get your ingredients ready.
Activate yeast:Combine yeast with water and sugar. Set aside for 5 minutes, until frothy.
1 envelope active dried yeast, ⅔ cup water, 1 ½ tablespoons sugar
Make dough:Add biscuit baking mix to a large mixing bowl. Add yeast mixture and milk, stirring well to combine. Knead dough around 15 times, until coming together. Add a little more baking mix, if needed (the dough is pretty sticky at first; don’t add too much baking mix or your buns will end up dense and firm vs soft and fluffy - if you let the dough sit for 5 minutes after stirring, it becomes much easier to handle).
4 cups biscuit baking mix, ⅔ cup milk
Shape rolls:Shape into 10 buns (I pinch them together on the underside and then roll with one hand on the counter for a smooth top). Place on a lined and greased baking sheet. Cover with a damp towel and let rise in a warm place for about 1 hour.
Bake:Heat oven to 400F. Melt butter (or beat egg for egg wash), lightly brush buns then bake for 12-15 minutes, until just turning golden brown.

Cool:Remove from oven to a wire rack. Immediately brush with remaining butter, if using. Serve warm or at room temperature.

Optional: Homemade biscuit baking mix
4 cups all-purpose flour
1 tablespoon baking powder
1.5 teaspoons salt
4 tablespoons butter
Combine flour with baking powder and salt. Cut in butter until crumbly. Use as directed in the recipe (this makes a little over 4 cups, but it’s even measurements so if you choose to do this homemade mix, you may need to add an extra drop of milk to the dough).
