Ingredients we’re going to use

This is about swaps and notes – jump to the ingredient list for the measurements etc.

The Chocolate: I usually grab the generic white candy melts because they are budget friendly, but for the best taste – can’t beat Girardelli’s white chocolate!

The Popcorn: Use lightly salted or plain. Avoid anything with heavy “fake butter” flavor, or it’ll clash with the white chocolate. If you pop it yourself, make sure it’s totally cool so the chocolate doesn’t turn into a gloopy mess.

The Marshmallows: The bunny-shaped ones are adorable, but let’s be real — sometimes the store is picked over. Regular mini marshmallows work exactly the same and still look cute with the pastel colors.

1: The big bowl.

Use the biggest mixing bowl you own. You need room to really “toss” the popcorn like a salad so every piece gets a little bit of that chocolatey glue.

2: The melt.

Don’t rush the microwave! White chocolate is picky. Go 20 seconds at a time and stir, even if it looks like nothing happened. If you overheat it, it turns into a grainy paste that you can’t save.

3: The “salad toss”.

It really works like tossing a salad! Work fairly quickly once the chocolate is on. You want to get those M&Ms and marshmallows stuck in there before the coating starts to harden.

4: The finish.

For that “fancy” look, I just use a spoon to zig-zag the pink chocolate over the tray. Don’t worry about being perfect — the messier it looks, the more “artisanal” it feels, right?

Add your sprinkles immediately while the pink drizzle is still wet so they actually stay on, then let it get firm completely.

5: Serve.

This is best served the day you make it so the popcorn stays crunchy. I like to scoop it into little clear cellophane bags with a pastel ribbon — it makes the cutest (and cheapest) little Easter basket filler or teacher gift!

  • Sift out the kernels: Nobody wants to chip a tooth. Shake the popcorn so the unpopped kernels stay at the bottom of the bag/pot before adding it to the bowl.
  • Grease your parchment: A quick spray on the paper helps if any chocolate pools at the bottom, so it peels right off.
  • Low and slow melting: Stir your white chocolate frequently so it stays smooth and shiny. Whip up frosting, assemble cake, decorate, chill and serve!

FAQs

How do I stop the popcorn from getting soggy?
The key is letting the popcorn cool completely if you popped it fresh. Any steam trapped in the bag or bowl will turn your snack mix soft. Also, make sure your chocolate is melted but not boiling hot.

Can I leave the nuts out?
Of course! If you’re taking this to a school function where there might be allergies, just swap the nuts for extra pretzels or some puffed rice cereal (like Chex).

How long does it take to set?
Usually about 15–20 minutes on the counter, but if you’re in a massive rush, you can slide the whole baking sheet into the fridge for 5 minutes.

Ingredients
 

  • 8 cups lightly salted popped popcorn
  • 1 cup pretzel twists (broken into pieces)
  • ½ cup roasted and salted peanuts or cashews
  • 1 (11-oz) bag white candy melts or white chocolate chips ((candy melts are easier to melt, Ghirardelli is a little spendy but so good))
  • 1 (8-oz) bag bunny shaped marshmallows ((or regular mini marshmallows if bunnies are not available))
  • 1 (10-oz) bag pastel blend M&Ms
  • ½ cup pink candy melts
  • Easter sprinkles (as needed (I use 2-3 tablespoons))

Instructions
 

  • Mix dry ingredients:
    Add the popcorn, pretzels and nuts to a very large mixing bowl. If you popped the popcorn fresh, let it cool completely before using in the recipe. Line a baking sheet with parchment paper and spray with cooking spray.
    8 cups lightly salted popped popcorn, 1 cup pretzel twists, ½ cup roasted and salted peanuts or cashews
  • Melt chocolate:
    Melt the white candy melts according to package directions. If you’re using the microwave, be sure to stir after every 20 seconds so the chocolate doesn’t burn or turn grainy.
    1 (11-oz) bag white candy melts or white chocolate chips
  • Toss:
    Once melted, pour the chocolate over the popcorn mix and use two wooden spoons to mix it (kind of like a salad, ha!).
    Stir in the marshmallows and ¾ of the M&Ms.
    1 (8-oz) bag bunny shaped marshmallows, 1 (10-oz) bag pastel blend M&Ms
  • Spread on pan:
    Spread the popcorn on the prepared sheet pan.
  • Decorate:
    Melt the pink candy melts. Using a pastry bag, squeeze bottle or a spoon, drizzle the pink candy melts over the popcorn.
    Immediately sprinkle with the remaining M&Ms and the Valentine’s Day sprinkles.

  • Set:
    Let the popcorn cool and set completely, then break into pieces and serve right away for the freshest taste.
