In fact, my grandpa used to make honey when he was still alive and his was the absolutely best ever.

Ridiculous, I know. But I’ve done something else for you instead: I compiled the best leftovers recipes into a nice list, ready for all your T-Day food you can’t finish tonight!
But now back to those pancakes and fast forward to Christmas!
Remember the Gingerbread Spice Mix recipe I shared with you last week?
Apart from the perfect gingerbread cookies I wanted to bring more uses for all that spice mix to you guys!
And what better to make than lovely, fluffy and super soft pancakes!
I know that Christmas morning breakfasts are all about overnight casseroles and the such but hear me out!
I said at some point that it would probably be a while until I’d make pancakes again.
But then I decided I had to create a super easy recipe to whip some up because I just couldn’t wait any longer.
And thus the Gingerbread Pancakes Which Are Perfect for Christmas Morning were born.
When I first tested the recipe I wanted to make them into gingerbread man shapes because how cute?!
Yes, it’s totally something I saw on Pinterest (by the way, are we Pinterest friends yet?).
And while it did work somehow it was neither as cute as I had hoped it would be nor was it any kind of fun to scrape dried pancake batter off a gingerbread man cookie cutter.
So I decided to instead leave them in their traditional pancake shape and save some time with the clean-up!
And really, if I can make them with a three month old who ideally wants to spend all her time in mommy’s arms I’m sure it will be easy-peasy for you to serve them to your family on Christmas morning!
Top them with butter, some runny honey and a sprinkling of cinnamon and believe you me – you will know Christmas has arrived!
Gingerbread Pancakes Recipe {Perfect for Christmas Morning!}
Ingredients
Dry Ingredients
- 1 1/2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons Gingerbread Spice Mix or use any blend of spices mentioned in the spice mix recipe
- 2 teaspoons baking powder
- 1/4 cup brown sugar
- 1/4 teaspoon salt
Wet Ingredients
- 1 cup milk
- 2 tablespoons honey
- 2 tablespoons molasses (not blackstrap molasses they're too bitter!)
- 1 large egg
- 2 tablespoons vegetable oil
Instructions
- In a large bowl mix the dry ingredients well. Whisk the wet ingredients together in a measuring jug and pour into the dry ingredients. Mix until just combined - a few lumps are fine.
- Heat a griddle or frying pan over medium-high heat. Add a knob of butter or spray with cooking spray. Pour about ¼ cup of the batter onto the griddle or into the frying pan. Cook for a few minutes or until you start seeing bubbles forming on the surface. Flip and continue cooking for another 1-2 minutes.

Thanks Jess! Aww that’s such a cute story! You can make them into gingerbread shapes with cookie cutters but it’s really not much fun to do, haha!
