These Thai Peanut Chicken Skewers are easy to make and much healthier than getting takeout! The sauce is amazing – you HAVE to try it!

Thai Peanut Chicken Kabobs Pin 1

Are you seeing what I’m seeing?

Delicious chicken tenders, conveniently put on skewers for some easy dipping action and then an amazing satay style peanut butter dip to go with it?

Yes? OK, in that case you’re seeing what I’m seeing. Delicious, right?

I can’t help myself, but I just love finger food type-y things I can dip, like these Sticky BBQ Slow Cooker Meatballs or these Sticky Sweet Chili Chicken Wings.

I hope you’re as big a thai peanut chicken fan as I am because this one. It’s so good you won’t believe your tastebuds!

How to Make Chicken Satay Skewers:

How to Make Thai Peanut Sauce:

To be honest, I’m super lazy when it comes to dips and sauces… Which is why I LIVE for the ones I can just stir together.

So, this is exactly the kind of dip you can stir up in 5 minutes, aka before the kids have pulled out all of their toys while you weren’t watching.

My way of making a satay-style sauce is to basically mix peanut butter and coconut milk with various ingredients to spice things up.

You can use the recipe below as a guide and season to taste. This is the way I’d make it for adults, for the kids I leave out the ginger, fish sauce, chili and cayenne – it still turns out delicious!

NOTE: Recipe updated 08/03/2017 after complaints about it being too salty – you were all so very right, it was terrible, now it should taste a lot better. My apologies!

How Long to Grill Chicken Kabobs:

Chicken kabobs are really quite small, so they cook fast on the grill.

Depending on the thickness of your chicken pieces, it takes 4-8 minutes per side on a hot grill.

It will be about the same time in a grill pan on the stove.

What can I do with leftover peanut sauce?

In case the weirdest thing ever happens and you end up with leftover peanut sauce, you can store it in an airtight container in the fridge for 1-2 days.

To use it up, you can thin it out with water and use it on noodles or use it as a dressing for a salad.

Total 20 minutes mins
Servings 4

Ingredients

For the Chicken

  • 1 pound chicken tenders threaded onto small skewers
  • Salt, pepper and soy sauce to taste

For the Sauce

  • ½ cup creamy peanut butter I used all natural
  • ¼ inch piece fresh ginger minced
  • ½ tablespoon brown sugar
  • 1 garlic clove minced
  • 1 tablespoon lime juice
  • ½ tablespoon fish sauce
  • 1 tablespoon soy sauce
  • ½ cup coconut milk OR water or a mix of both
  • fresh chili, cayenne pepper or chili sauce to taste (optional)

Instructions

  • Season the chicken with salt, pepper and soy sauce. Heat the grill (or a grill pan over medium high heat on the stove). Grill the kabobs until the chicken is done, about 4-8 minutes per side (depending on the thickness of your chicken).
  • While the chicken is cooking, whisk all sauce ingredients together in a small bowl. Alternatively for a smoother sauce, place all ingredients in a mini food processor or blend with a stick blender. Add more coconut milk or water if the dipping sauce seems too thick.
  • Serve the hot chicken skewers with the peanut dipping sauce.

I tried this thinking it looked delicious, but the sauce was awful! It looks completely different than the picture posted and the ingredients didn’t mix very well. It tasted like mostly soy sauce with a little bit of peanut. Not worth making and not worth the calories.

I’m very, very sorry for your bad experience, Mikayla. I’ve been meaning to change this recipe for weeks now, because it’s nearly three years old and you’re not the first to complain. I’ve been working on my cooking skills a lot since then and I’m updating the recipe right now with the new version of the sauce vs waiting until I have the new pictures ready, as I really hate it when I give someone a negative experience with food. I hope you can accept my apology!

      Best, Nora

I’m not sure if I did this wrong but it was so salty. And it wouldn’t mix together, I had to heat it up. Also, it’s very bland. Anyone looking to make this recipe find a different one if you actually want something with flavor. Not trying to be rude just a warning!

Thanks for your comment, Nelly. I always get very mixed reviews on this recipe. Some people absolutely love it and some say it’s way too salty. I think it just comes down to what brands you’re using. If you have a strong soy sauce and a salted peanut butter, it will be very different than when using unseasoned natural peanut butter and a milder soy sauce. Also, this recipe is nearly three years old – my recipe development skills definitely improved by a lot since then. It is also very possible that I made an honest mistake when I wrote down the recipe, but for the life of me I cannot remember.

I really appreciate your honesty. I’ll go back and add this recipe to my list of things to redo, so I can find a better way to make this sauce. Thank you for the feedback!

The baby must be a toddler now. ❤️
When I’m overwhelmed and housework has to be done. I use the Fly lady approach. I get as much done in 15 minutes as i can, then stop to do what’s important. Most small children will be ok with this some of the time.

Made these for Father’s Day luncheon. To the Satay sauce I added about a tablespoon of honey. I think the next time I will decrease the soy sauce in half. I thought it came out a bit too salty. Other than those two alterations, I really loved this easy recipe.

Thanks for your review Kim! I’m sorry it was a bit too salty for your taste – we love salt around here so I’m definitely biased when cooking!

OMG, the satay sauce looks delicious! This makes me miss home so much (i.e. Singapore) cause satay sauces are so prevalent there.
I find that there’s slight variation in the kinds of satay sauces made between ‘Western’ and ‘Eastern’ countries, but I find all of them wonderful either ways. 🙂

Beautiful recipe, Nora, thanks for sharing it!

P.S. We both use Foodie Pro theme for our blogs, hee hee! I just started last week looking into customizing it further, still learning the (boring) coding stuff!

Thank you Levan! I bet there’s huge differences between western satay and the authentic ones!

I love Foodie Pro but yes, getting to know the coding can be soooo boring! 🙂

Don’t be hard on yourself for not being organized, I would have never guessed looking at these beautiful chicken skewers, which look so juicy and delicious! And I tend to do pick up around the house every day when I get home from work, then once a week (usually Sundays) I do a big clean that includes vacumming and mopping. Works great for me!

I can imagine it gets hard to keep track of everything and keep a clean house with a baby! I’m such a neat freak in general, so my only advice is to do a little everyday. I love to keep a clean house, but don’t like to do it all on the weekends, so I break down my tasks one day at a time. So like on Wednesday, I clean one or two of the bathrooms, Thursday I dust and clean the third bathroom, etc. Then come the weekend, you’re all set! Just my suggestion! 🙂 These chicken skewers look delicious, Nora! I love the peanut sauce that goes with it. So easy to dunk and eat!
