Garlic Parmesan Roasted Asparagus

Garlic Parmesan Roasted Asparagus is the side dish you’re going to make again and again this spring. It’s SO easy to whip up, you won’t believe it! We love this for special meals like Easter dinner just as much as a veggie side on regular weeknights.

For a very long time, I thought there was only way to make asparagus.

Boiling it.

And by a very long time I mean about 25 years.

Yeah.

Not that I don’t like boiled asparagus, but it’s just not the most exciting thing. I mean, unless you dip it into heaps and heaps of hollandaise sauce. Which is not the greatest thing you can do every day from the end of March to the end of May…

So when I was introduced to the idea of things like grilling asparagus or roasting asparagus? And found out how wonderfully delicious asparagus can be without a bucket of fancy mayo? I was overwhelmed.

By delight.

I have not boiled a single spear of asparagus since. My kids LOVE roasted asparagus. What more could I ask for?

And this Garlic Parmesan Roasted Asparagus is helping us in even more ways!

Apart from not having to make hollandaise sauce every day (let’s be real here… Apart from not opening a carton of hollandaise sauce every day), we’re just plain eating more vegetables!

It’s not that we’re vegetable haters (not at all!), but with two full-time working parents and two little kids, things get a tiny bit crazy around here. And a lot of times we don’t have any capacities left to make a more involved vegetable dish to go with dinner.

But this one? It’s SO easy to throw together, there are no excuses!

How I make my Garlic Parmesan Roasted Asparagus:

tl;dr:

  1. Rinse and trim the asparagus stalks
  2. Place on a sheet pan in a single layer with a little oil, salt and pepper
  3. Roast in the oven
  4. Sprinkle with parmesan
  5. Finish roasting for another couple of minutes
  6. Devour

Garlic Parmesan Roasted Asparagus, extended:

When I first learned about how to make roasted asparagus, I had to laugh because it’s SO simple! But so incredibly good. And best of all, my kids eat it like crazy!

First you’re going to have to start preheating the oven.

Then you’re going to rinse the asparagus and trim the ends. Don’t cut off too much, just enough to get rid of the very fibrous and tough-to-eat end.

Whatever you do, don’t cut off the tips. When I was in kindergarten, my best friend’s grandma from Greece made asparagus for us and cut off and threw away all the asparagus tips. Don’t cut them off. They’re the best bit!

Next, place the trimmed asparagus on a sheet pan in a single layer.

Drizzle with olive oil and sprinkle with salt, dried garlic powder and black pepper right on the pan and toss it lightly. Roasting vegetables is one of the few times I use dried garlic powder, because freshly minced garlic burns so quickly at high temperatures in the oven!

Now you’re going to roast it in the oven for around 12 minutes, or until it’s almost done.

All that’s left to do now is sprinkling on the parmesan and adding it back to the oven for another 2-3 minutes.

Then I drizzle it with lemon juice. And I like to sprinkle on a little extra parmesan right when I take it out of the oven, too. Because I can. And there’s no hollandaise sauce, so I feel fine about it 😉

What I love most about this Garlic Parmesan Roasted Asparagus:

When we get bored of the parmesan flavor, we can just switch it up by adding a different topping!

This is such a versatile recipe, it never gets boring to roast asparagus. We have some almost every day during the season, and we love every single bit of it.

It’s almost like roasted potatoes. Give me roasted baby potatoes, roasted fingerling potatoes or roasted red potatoes – such basic recipes, but I could eat them every single day.

The kids and my husband agree that we definitely couldn’t eat boiled asparagus all the time! But this roasted one? We are so in for that!

Ingredients
 

  • 1 pound asparagus rinsed and trimmed
  • 1 tablespoon olive oil
  • ½ teaspoon dried garlic powder
  • Sea salt and cracked black pepper
  • ½ lemon juice only
  • 3 tablespoons finely grated parmesan cheese

Instructions
 

  • Preheat the oven to 410°F (210°C).
  • Place the asparagus on a sheet pan in a single layer. Toss with the olive oil, garlic powder, salt and black pepper.
  • Roast in the preheated oven for about 12 minutes, or until almost done.
  • Sprinkle with 2 tablespoons parmesan cheese. Roast for 2-3 more minutes. Drizzle with lemon juice and sprinkle with the remaining tablespoon of parmesan cheese. Serve.
